If you were wondering what Coodles are...
Cucumber + Noodles = Coodles
This is a great pasta noodles alternative which is low carb, high fiber, and is actually really filling! Cucumbers are very high in water which makes this a very hydrating dish! Even kids LOVE this!
Sauce:
1 Cup Cashews (Soaked for 4 hours and strained)
1 Tbs Nutritional Yeast
1 tsp Onion Powder
2 Cloves Garlic
¼ tsp Salt
Pepper to taste
Coodles:
Cucumber
Toppings:
Cherry Tomatoes
Capers
Cashew Parmesan
Procedure:
Place all the sauce in the Vitamix Blender until smooth.
Peel and cut the cucumber and place in the Paderno Spiralizer.
Turn the Cucumber into Coodles!
Place the Coodles in a bowl, pour the sauce on, and top with desired toppings.
