VitaKitchen Recipe: Tofu Chocolate Pudding

Don't know what to make for that New Years party? How about something healthy and easy to make? The holidays are stressful enough, best to treat your body with something delicious that is actually good for you! 

Here's a healthier alternative to Chocolate Pudding, which even sets similarly to a Chocolate Mousse!

Tofu Chocolate Pudding

Ingredients:

  • 1 Block of Tofu (approx. 400g)
  • 150g Dark Chocolate (Dairy-Free, Vegan)
  • 1/2 tsp Vanilla Extract
  • 3 Tbs Agave Nectar or Coconut Nectar
  • Toppings of choice


Instructions:

  1.  Melt the dark chocolate in a stainless bowl over boiling water.
  2.  Place all the ingredients in the Vitamix Blender and blend until smooth.
  3.  Place in a bowl, and place in the fridge for a 2 hours to let it set.
  4.  Top with nuts, seeds, grated/shaved chocolate, dried fruit, crushed sugar canes or any topping of choice.
  5.  Serve, Share, Enjoy!
